2018 Chicken CSA

Welcome to our 2018 Chicken CSA information page.  We have quite a few changes for the CSA this year, so please read carefully!

Logistically, the chicken program is mostly going to work the same this year as in years past, albeit with three pickup dates (June 14th, July 16th and October 8th) instead of four pickup dates.

One big and positive change is that we are switching to a certified organic grain for all of our poultry this year.  For years, we have been committed to only using non-gmo grains which has set us apart from other local area farms.  But we are taking things a step further this year, because we care about the health of both our customers and our environment!

We are moving away from the various “size packages” and multiple pricing structures from years past. The price per pound will be the same across the board for everyone, regardless of how many chickens you pre-order. So here is how ordering, deposits and payments will work:

  • Chickens will be priced to the CSA at a flat 10% discount off of our retail pricing (moving up from $4.99 to $5.49/lb), so the CSA price will be $4.95/lb.
    • This will equate to roughly a $3-$5 increase per chicken from last year.
    • The cost increase is mostly related to the increased production costs by switching to organic grain.
  • You can order as few or as many chickens as you would like (from 15-40) in increments of 5.
    • Our goal is to raise slightly larger chickens than last year, so please keep that in mind when ordering if you are on the fence about ordering 5 more or 5 less.
    • Our average whole chicken weight this year will be between 5-5.5lbs.
  • You’ll place a $10 deposit per chicken now to lock in your spot (via a check or PayPal), then pay the difference at each pickup for birds taken that day.
    • There will not be one big single balloon payment in May like years past.
    • Example: You order 30 chickens and place a $300 deposit now. You’ll pickup 10 chickens on each of the three dates. When you arrive we’ll grab 10 birds, add up all the weights and take $4.95/lb x the total weight. We will then subtract the deposit for the birds you are taking that day (in this case 10 birds x $10 deposit = $100) from the total and collect the difference. So you’ll pay something each time you come to the farm.
  • You will still get to save 10% on any other items you purchase on farm the day of pickup, including beef, pork and additional poultry.
  • If you choose 30 or fewer chickens you can choose to get all of your CSA birds in two trips, or one trip if you choose 20 or fewer birds.

The chickens come whole, or you can elect to have them cutup for a small fee.  Simply let us know how many of your chickens you would like to have cutup at each delivery date.  Note that each chicken will be cut into the following pieces and placed into one bag: 2 breast, 2 thighs, 2 drumsticks, 2 wings, 1 frame. You can then separate your pieces to fit your needs and freeze them. Cost per cutup chicken is $2.00/each.

Discounted Holiday Bundle Boxes Are Back!

Forest Raised Pork:

  • 1 package of center cut pork chops
  • 1 package of our all-natural smoked bacon
  • 4lbs of sausage  – one each of breakfast, sweet Italian, chorizo and unseasoned ground pork
  • 3lbs of pork spare ribs

100% Grass-fed & finished black angus beef:

  • 1 package of t-bone steaks
  • 1 package of sirloin steaks
  • 3lbs of ground beef

 

Option 2 – Big Porker:

Check out our “Big Porker” holiday box if you would like a full range of our pork products.  The retail value of this package is over $170.00, but we are offering it at over a 15% discount with free delivery for just $149.00.

However, just like the Simpson Sampler quantities are limited and we’ll only make 10 of these available!  Here is what you will receive:

  • 1 pork shoulder roast
  • 2 packages (2 per pkg) of center cut pork chops
  • 2 packages of our all-natural smoked bacon
  • 2 packages (4 per pkg) of our bratwurst:  1 each of Wisconsin style and Fresh Polish (seasoned with garlic)
  • 4lbs of sausage  – one each of breakfast, sweet Italian, chorizo and unseasoned ground pork
  • 3lbs of pork spare ribs

 

Option 3 – Little Porker:

Check out our “Little Porker” holiday box if you would like a wonderful variety of our pork products, but in a smaller package.  The retail value of this package is over $115.00, but we are offering it at over a 15% discount with free delivery for just $99.00.  However, just like the other holiday boxes quantities are limited and we’ll only make 10 of these available!

The fine print:

For all packages we are also expanding our normal delivery area to all of greater Indianapolis including Zionsville, Carmel, Fishers, Noblesville, Lawrence, Wanamaker, Avon, Brownsburg & Plainfield.  We will also include all of Johnson County, Morgan County and the greater Bloomington and Elletsville areas as well.  Please note that all package sizes listed are approximate and not every box will be exactly the same.  All boxes will include the number of packages indicated and will meet or exceed the retail value listed.  Deliveries will take place between 10am-6pm on either Wednesday, December 14th or Wednesday, December 21st.   You can also choose to pick up your box at the Indy Winter Farmer’s Market on December 17th or at the Bindford Buying Club on December 17th.  Finally, you may pick up your box at the farm any day (on or before December 22nd) by appointment.

Remember that local poultry is only produced during the warm season months and we often run out of product by February, so use this opportunity to stock up and save! Steak Fajita Salad

This is an awesome way to turn one package of steaks into a meal for 8 people. We always begin with fresh, chemical free salad greens purchased at the farmers market.

Ingredients:

  • 12 ounces beef steak, cut into thin strips
  • 2 tsp dry fajita seasoning (salt, chili powder, paprika, cumin)
  • 1 sliced red, orange, or green pepper
  • 1 sliced onion
  • 1 can black beans – drained
  • 1 tomato – chopped
  • ½ c sliced black olives
  • cheese
  • lettuce

Directions:

  1. Sprinkle steak with fajita seasoning and let set for 2-4 hours before grilling if possible for best flavor.  Grill to medium rare and slice into thin strips.
  1. In skillet, saute peppers and onions in coconut oil until vegetables are tender.
  1. Makes 4 large salads.

Southwest Fiesta Dressing:

  • ½ c plain yogurt
  • ¼ c sour cream
  • 2 tbsp ketchup
  • 2 tbsp minced onion
  • 1 tbsp lemon juice
  • 1 tsp cumin
  • ½ tsp chili powder
  • 1 garlic clove – minced
  • ¼ tsp salt

Mix all ingredients together and chill.  Best if made an hour or more ahead of time.

Announcing Our New Binford Buying Club

As many of you know, we’ve been a vendor at the Binford Farmer’s Market since May of 2010.  It doesn’t feel like 5 summer seasons have gone by, but they have!  We’ve built a lot of relationships in the Binford area and as such, some of our most ardent supporters come from that market.

With that in mind, a couple of months back we began to think of a way to stay connected with our customers in the Binford area year round.  We considered a number of ways to do this, but the idea we kept coming back to was to form a buying club.  A buying club, in short, is simply a group of people who order product from a farmer and then have the items delivered into the city for pickup at someone’s home.  There are many different examples of how buying clubs are operated and what products they provide but they all hinge on one very important thing:  A really good buying club coordinator!

The coordinator is the glue that binds this type of relationship together and without them, the club simply won’t function.  As we started to pull the details of the buying club together, I began mentioning it to several of my regular customers at the Binford Farmers Market to gauge interest.  The interest was very high and the feedback was really positive.  We knew we were on to something and we just had to find the final piece!

One of those customers I mentioned our idea to was Meredith Sharp.  Meredith is an extremely passionate local foodie who supports us weekly and loves all of our products (but she is hopelessly addicted to our forest raised pork).  As we were parting ways the day I mentioned our idea she expressed an interest in being involved to help get this project off of the ground.  After hammering out some logistical details, Meredith agreed to be our official coordinator for the Binford Buying Club!  We feel really fortunate to have her, and her husband Matt, on board to help us make this a reality.

Now that we have all of the nuts and bolts figured out, we are happy to announce that our first delivery to the Binford Buying Club (BBC) will be on Monday, November 24thDelivery is free, and there is no minimum order required.  All you have to do is order by Sunday, November 23rd thru our online order form and select “Binford Buying Club” as your pickup point.  If you are not comfortable ordering online, you can also just contact Meredith via email and she can place your order for you.  Once your order has arrived, she’ll contact you about pickup times and take things from there.
