Pineapple Grilled Pork Chops

You can’t go wrong with a yummy marinade, forest raised pork and grilled pineapple rings!

Ingredients:

  • 1 (16 ounce) can pineapple rings, juice drained and reserved
  • 1/4 cup brown sugar
  • 1/4 cup Braggs Amino Acid (soy sauce substitute)
  • 1/4 tsp garlic powder or fresh pressed garlic clove
  • black pepper to taste
  • 4 forest raised center cut or sirloin pork chops

Directions:

  1. Mix together the juice, sugar, braggs and garlic into a marinade until sugar dissolves.
  2. Let marinate at least 4-6 hours, or overnight for best results.
  3. Grill chops until done, about 5-8 minutes per side.
  4. Add fresh ground pepper to taste.
  5. While chops are grilling, place pineapple rings on grill and allow to cook until hot.
  6. Serve pineapple ring on top of chops and enjoy!

Frequent Buyers Discount Program

Are you a fan of our pasture raised poultry, forest raised pork and 100% grassfed black angus beef?  Love a good deal, but don’t have the space or need for a whole hog or half cow?  Would you like to get a 10% bonus on every purchase from our farm?  Our new Frequent Buyers Discount Program might be just the solution for you!  Here’s how it works:

  1. Shares cost $100 each per month, and you can buy just one or as many as you like.
  2. We’ll bill you electronically via Square at the first of each month for $100 (no additional fees will be added).
  3. You’ll receive a 10% bonus ($10) each month for each share, no strings attached.  This stretches your buying power by $10 every month!
  4. Use your share however you like, on whatever products we currently have in stock.
  5. You can use all accrued credits at one time, once a month, or however you choose.  We’re flexible!
  6. Pickup your goodies at any farmer’s market, on the farm (by appointment) or via free delivery (restrictions apply).
  7. If you go over your share amount in a three month period, we’ll simply collect the difference at the normal retail price.
  8. Each share you sign up for will last three months, costing a total of $300 that will be good for $330 in farm credit.
  9. You can stop and restart anytime after your three months are up, or just sign up again to keep the savings going all year long.  Jump on board at anytime to start saving!

The fine print:

  • If using a farmer’s market to collect your goodies, products must be picked up at the same location each month for record keeping purposes.
  • You can choose from any products currently in stock (sorry, no rain checks).
  • All credits must be used by the end of the third month.  Any share credits not used will expire at that time and are not redeemable.
  • You can pre-order online using our order form, or simply show up and let us know what you would like (you’ll be limited to what we have on hand if at a farmer’s market).  For large distributions in excess of $100 retail at a farmers market, a pre-order via our website or thru email is REQUIRED.
  • Credits can be applied to regular retail pricing and discounted retail items.  They can not be used towards bulk purchases (half and whole animals, chicken CSA, etc.).

2017 Chicken CSA

Welcome to our 2017 Chicken CSA information page.  We have quite a few changes for the CSA this year, so please read carefully!

First and foremost, for the first time in 5 years we will be having our first pricing increase.  Depending on what package you select, you will see a .30-.40/lb increase from years past.  We have fended off this increase for as long as we could, but increased livestock and processing costs over the past two seasons have finally caught up with us.  To be honest we should have applied this increase last season but we didn’t, however this season we don’t really have a choice.  Our hatchery and processor have both increased their prices in order to earn a fair wage, and unfortunately we have to do the same.

Second, we will only have four pickup dates this season as we are cutting out one batch of chicken right in the middle of the summer.  You’ll be picking up more chickens during each trip to the farm, and we won’t have an August pickup date.  If you are wondering why we are cutting back on production the answer is simple:  Our boys are getting older and we have not taken a family trip during the summer since 2008!  This will allow us an opportunity to take a short trip in July during our small break with no chickens on farm.  The cattle and pigs require a lot less labor and can be easily managed by someone other than us for a few days, allowing us to get away.

As you may have already figured out, fewer batches of chicken means fewer CSA spots available.  We hope to be able to accommodate most of our customers from 2016, but to be honest we will not have as many slots available as we did in years past.   Once these limited number of spots for our CSA fill up, they are gone until the following year.

Third, we will still be accepting deposits via PayPal, but checks via mail and cash in person are also welcomed for your deposits.  Just like in years past, any balances paid on May 25th with a card will incur a fee of 3%.

Lastly, as a new added benefit all CSA customers will be eligible for 10% off any retail purchases made at the farm on the day of pickup.  This includes all cuts of poultry, pork, and beef (excludes ground beef) that are in our inventory at the time (no rain checks).

Those who elect to join our CSA pay up front for a predetermined amount of whole chicken by weight, but get a great discount for doing so!  Then at five different dates during the summer season you simply pick up your order at our farm.  Best of all, the chickens are fresh which gives you the ability to cook them immediately, cut and repackage them to meet your families needs or simply freeze them whole.

New for 2017:  You can choose to skip two pickup dates this year with a small CSA, or skip one date with a medium, large or extra large CSA.  Please note we will not be able to pass out any extra chickens on May 25th.  On that date, you’ll receive 1/4 of your estimated total for the CSA and extra birds each time you pickup thereafter.  Please coordinate with us in advance to let us know when you will be coming or not.  Also those who live farther away (more than 30 minutes) are encouraged to make fewer trips and collect more chickens on each trip to save on fuel.  If you choose a small pack you can get all of your CSA birds in as few as two trips.

The chickens come whole, or you can elect to have them cutup for a small fee.  Simply let us know how many of your chickens you would like to have cutup at each delivery date.  Note that each chicken will be cut into the following pieces and placed into one bag: 2 breast, 2 thighs, 2 drumsticks, 2 wings, 1 frame. You can then separate your pieces to fit your needs and freeze them. Cost per cutup chicken is $2.00/each.

A deposit based on the package you choose is due now, and the balance in full will be required on May 25th at your first CSA pickup, unless prior arrangements are made.  If you would like to make fewer trips to collect your chicken, we will do our best to accommodate  you.  Simply let us know what your preference is and we will do our best to meet your request.

Quantities shown below are estimates, based on an average chicken weight of 4.5-5lbs. However you will receive as many chickens as required until you reach the total pounds of meat shown with each package description, i.e., 75lbs total in the Small Family Pack.

For all packages we are also expanding our normal delivery area to all of greater Indianapolis including Zionsville, Carmel, Fishers, Noblesville, Lawrence, Wanamaker, Avon, Brownsburg & Plainfield.  We will also include all of Johnson County, Morgan County and the greater Bloomington and Elletsville areas as well.  Please note that all package sizes listed are approximate and not every box will be exactly the same.  All boxes will include the number of packages indicated and will meet or exceed the retail value listed.  Deliveries will take place between 10am-6pm on either Wednesday, December 14th or Wednesday, December 21st.   You can also choose to pick up your box at the Indy Winter Farmer’s Market on December 17th or at the Bindford Buying Club on December 17th.  Finally, you may pick up your box at the farm any day (on or before December 22nd) by appointment.

Oven Roasted Sirloin Tip Beef

Who doesn’t love a great roast beef?  This is a super tasty, super easy recipe that our family loves.  And the best part?  The thinly sliced roast beef sandwiches you can make the next day!

Ingredients:

  • 1 1/4 Tbsp paprika
  • 1 Tbsp salt
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 2 Tbsp olive oil
  • 1 (3 pound) sirloin tip roast

Directions:

1. In a small bowl, mix the paprika, salt, garlic powder, black pepper, onion powder, oregano, and thyme. Stir in the olive oil and allow the mixture to sit about 15 minutes.

2. Preheat oven to 350 degrees. Line a baking sheet with aluminum foil.

3. Place roast on the prepared baking sheet and cover on all sides with the spice mixture.

4. Roast about 50 minutes to 1 hour in the preheated oven, or to a minimum internal temperature of 145 degrees. Let sit 15 minutes before slicing.

5. Drain pan drippings into a small saucepan and simmer to reduce. Add flour or small amount of arrowroot powder to thicken if desired. Serve over the top of sliced beef and enjoy.
