Steak Fajita Salad

This is an awesome way to turn one package of steaks into a meal for 8 people. We always begin with fresh, chemical free salad greens purchased at the farmers market.

Ingredients:

  • 12 ounces beef steak, cut into thin strips
  • 2 tsp dry fajita seasoning (salt, chili powder, paprika, cumin)
  • 1 sliced red, orange, or green pepper
  • 1 sliced onion
  • 1 can black beans – drained
  • 1 tomato – chopped
  • ½ c sliced black olives
  • cheese
  • lettuce

Directions:

  1. Sprinkle steak with fajita seasoning and let set for 2-4 hours before grilling if possible for best flavor.  Grill to medium rare and slice into thin strips.
  1. In skillet, saute peppers and onions in coconut oil until vegetables are tender.
  1. Makes 4 large salads.

Southwest Fiesta Dressing:

  • ½ c plain yogurt
  • ¼ c sour cream
  • 2 tbsp ketchup
  • 2 tbsp minced onion
  • 1 tbsp lemon juice
  • 1 tsp cumin
  • ½ tsp chili powder
  • 1 garlic clove – minced
  • ¼ tsp salt

Mix all ingredients together and chill.  Best if made an hour or more ahead of time.

Tortilla Soup

This simple recipe is great anytime of the year, and it’s very easy to put together.  And even though it is a soup, it is very hardy and filling!

  • 1 package chicken frames
  • 1 tsp salt
  • 1 package frozen sweet corn
  • 1 jar salsa
  • 2 cans black and/or pinto beans
  • seasoning to taste (chili powder, cumin and mineral or sea salt)
  • corn tortilla chips
  • shredded cheese
  • sour cream (optional)

Directions:

Bring the chicken frames to a boil, then reduce heat and let simmer in a large pot of water for 2-3 hours to make a great stock.  Strain and remove frames to a 13×9 pan and let cool.  Add 1 tsp salt to the stock.  Combine all other ingredients in the pot and bring to a boil and let simmer 20 minutes.  While mixture is simmering, remove meat from chicken frames and add to the pot.  Serve in a bowl over corn tortilla chips and top with cheese and sour cream.  Enjoy!

Perfect Taco Seasoning

This is a super easy, super quick meal you can make any night of the week.  We use organic hard taco shells and top the meat off with some freshly shredded organic raw cheese, salsa, fresh lettuce mix and a bit of sour cream.  This will make 8 servings and with a small side dish can feed a family of four.  It’s a great way to stretch just one pound of meat into a dinner meal!

To 1lb browned ground meat (beef or pork) add:

  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp mineral or sea salt

Announcing Our New Binford Buying Club

As many of you know, we’ve been a vendor at the Binford Farmer’s Market since May of 2010.  It doesn’t feel like 5 summer seasons have gone by, but they have!  We’ve built a lot of relationships in the Binford area and as such, some of our most ardent supporters come from that market.

With that in mind, a couple of months back we began to think of a way to stay connected with our customers in the Binford area year round.  We considered a number of ways to do this, but the idea we kept coming back to was to form a buying club.  A buying club, in short, is simply a group of people who order product from a farmer and then have the items delivered into the city for pickup at someone’s home.  There are many different examples of how buying clubs are operated and what products they provide but they all hinge on one very important thing:  A really good buying club coordinator!

The coordinator is the glue that binds this type of relationship together and without them, the club simply won’t function.  As we started to pull the details of the buying club together, I began mentioning it to several of my regular customers at the Binford Farmers Market to gauge interest.  The interest was very high and the feedback was really positive.  We knew we were on to something and we just had to find the final piece!

One of those customers I mentioned our idea to was Meredith Sharp.  Meredith is an extremely passionate local foodie who supports us weekly and loves all of our products (but she is hopelessly addicted to our forest raised pork).  As we were parting ways the day I mentioned our idea she expressed an interest in being involved to help get this project off of the ground.  After hammering out some logistical details, Meredith agreed to be our official coordinator for the Binford Buying Club!  We feel really fortunate to have her, and her husband Matt, on board to help us make this a reality.

Now that we have all of the nuts and bolts figured out, we are happy to announce that our first delivery to the Binford Buying Club (BBC) will be on Monday, November 24thDelivery is free, and there is no minimum order required.  All you have to do is order by Sunday, November 23rd thru our online order form and select “Binford Buying Club” as your pickup point.  If you are not comfortable ordering online, you can also just contact Meredith via email and she can place your order for you.  Once your order has arrived, she’ll contact you about pickup times and take things from there.

It’s Thanksgiving Turkey Time!

If you’re looking to have a delicious Thanksgiving turkey on your table in a couple of months, you need to plan on reserving your bird from our farm today! We have limited quantities and rarely have any left for purchase after our pre-orders are taken care of for all of our customers. You can also plan in advance and get two turkeys now, one for Thanksgiving and one for Christmas!

If you’d like to have one of these sitting our your table this holiday season, you’ve got to take action now and reserve your order. It’s easy and simple and can be done right online!
