Have you ever wanted to sample a whole bunch of our various products?  What if you could buy an assortment of our authentic, pasture raised meats at a nice discount?  And to top it all off, what if we brought it to your door with FREE delivery anywhere around Indy, Bloomington, Greenwood, Franklin, Mooresville or Martinsville?  If that sounds good to you, then now is your chance to get in on something that we have never offered before in one of two special packages.  And don’t get one for just yourself, consider sending one as a unique Christmas gift!

Option 1:

The “Simpson Sampler” will be an awesome mix of our pastured poultry, forest raised pork and 100% grass-fed black angus beef. The retail value of this package is over $235.00, but we are offering it at over a 15% discount with free delivery for $199.00.

However there is one catch:  We are only offering 10 of these!  We don’t normally discount our products this much, nor do we normally deliver for free this far from home, so if you want one of these act fast!  So what’s included?  It is a terrific mix with some of our most popular products:

Simpson Sampler

Pastured Poultry:

  • 2 whole chickens
  • 2 packages of chicken breast
  • 1 package of chicken frames for stock

Forest Raised Pork:

  • 1 package of center cut pork chops
  • 1 package of our all-natural smoked bacon
  • 3lbs of sausage  – one each of breakfast, sweet Italian and unseasoned ground pork
  • 3lbs of pork spare ribs

100% Grass-fed & finished black angus beef:

  • 1 package of t-bone steaks
  • 1 package of rib steaks
  • 4lbs of ground beef

Check out our “Holiday Gift Box” if you need a smaller quantity, it will be sure to please your family for Christmas.  And just like the larger box, you’ll get a great mix of our wonderful products.  The retail value of this package is over $77.00, but we are offering it at over a 10% discount with free delivery for just $69.00.

However, just like the Simpson Sampler quantities are limited and we’ll only make 20 of these available!  Here is what you will receive:

The fine print:

For either package we are also expanding our normal delivery area to all of greater Indianapolis including Zionsville, Carmel, Fishers, Noblesville, Lawrence, Wanamaker, Avon, Brownsburg & Plainfield.  We will also include all of Johnson County, Morgan County and the greater Bloomington and Elletsville areas as well.  Please note that all package sizes listed are approximate and not every box will be exactly the same.  All boxes will include the number of packages indicated and will meet or exceed a retail value of $235.00 or $77.00 respectively.  Deliveries must take place between 10am-4pm on either Wednesday, December 16th or Tuesday, December 22nd.   You can also choose to pick up your box at the Indy Winter Farmer’s Market on either December 12th or December 19th or you may pick up your box at the farm any day (on or before December 22nd) by appointment.

Marinated Pork Chops with Pineapple Salsa

This an awesome summertime recipe that we just love.  Make the most of some fresh pineapple and vine ripe tomatoes while in season!
Marinated Chops with Pineapple Salsa

Marinated Chops with Pineapple Salsa

Marinade:
1/4 teaspoon lime zest
2 limes, juiced
1 tablespoon honey
1 small shallot, chopped
1 jalapeno, chopped and seeds removed
1 garlic clove, chopped
1/2 cup olive oil
Salt
Pineapple Salsa:
1/2 pineapple, diced and cored, juices reserved
1 tomato, diced
1/2 red onion, minced
1/2 small jalapeno, diced
1 tablespoon chopped cilantro leaves
1 lime, juiced
Salt and pepper
4 bone-in, center-cut pork chops

Directions:
For the marinade:  Blend all the ingredients in a large bowl. Place in a resealable plastic bag and add the pork chops. Marinate in the refrigerator for up to 3 hours.

For the salsa:  Mix all the salsa ingredients in a medium bowl.  Taste for seasoning.  Set aside for at least 20 minutes to let flavors meld.

Preheat grill to medium heat and remove chops from marinade.  Grill for 8 minutes per side for a medium chop.  Remove chops from grill and let rest 10 minutes before slicing.  Spoon the salsa on top, serve and enjoy!

And don’t forget, all of our poultry is raised on our 100% chemical free pastures and fed locally raised GMO FREE GRAIN! We are one of only a handful of local farms using GMO free grains to feed our poultry. Remember that local poultry is only produced during the warm season months and we often run out of product by February, so use this opportunity to stock up and save! We will also have all of our forest raised pork available for retail as well, also fed GMO free grains. And our 100% grassfed beef is also currently available.

Zucchini Lasagna

In our home, we are always looking for a healthy alternative to grain based pasta in our recipes.  Fresh, local, in season zucchini is just the thing to make a tasty lasagna without pasta.  Our forest raised pork sausage seasoned with just the right sweet Italian spices (msg and sugar free) is the perfect accompaniment to this family favorite.

Ingredients:

  • 1lb sweet Italian sausage
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • salt and pepper to taste
  • 2 medium zucchini squash, sliced lengthwise into 1/4 thick strips
  • 1 container ricotta cheese (Organic Valley is our preference)
  • 1 cup cheese (cheddar or mozzarella – again we like Organic Valley)
  • 1/2 cup chopped shiitake mushrooms (optional)

Directions:

  1. Preheat oven to 350 degrees.  Lightly grease a medium baking dish (we prefer organic coconut oil).
  2. In a skillet over medium heat, cook the sausage until evenly brown and drain juices.  Mix the onion, garlic and tomato sauce into the skillet and season with salt and pepper.  Bring the mixture to a boil, reduce heat to low and simmer 10 minutes.
  3. In the bottom of the prepared baking dish, layer 1/2 the zucchini strips.  In a bowl, beat together the ricotta cheese and egg, and spread over the zucchini.  Scoop about 1/2 of the sausage mixture over the ricotta and egg mix, then sprinkle with 1/2 the shredded cheese.  Layer the remaining zucchini, sausage and shredded cheese.
  4. Bake 45 minutes in a preheated oven.
  5. Allow to sit 10 minutes before slicing to serve.
